Sushi
Jaeger has made sushi on at least two occasions, for Megafest 6.0 and Megafest 7.0. The recipe for the Megafest 6.0 sushi was not documented. The production of sushi during Megafest 7.0 is included in the video.
Megafest 7.0
Recipe adapted from Brown Rice & Tofu Maki. This recipe was also used for Megafest 7.1.
- 4 1/4 cup water
- 2 1/4 cups short-grained brown rice
Boil water. Add rice and cook for 50 minutes. Remove from heat and let stand for 10 minutes.
- 3 tablespoons mirin
- 3 tablespoons soy sauce
- 1 1/2 teaspoons sugar
Stir mirin, soy sauce, and sugar together in a small skillet. Simmer until slightly thickened, about 3 minutes.
- 1/3 cup rice vinegar
- 2 teaspoons sugar
- 1/2 teaspoon salt
Spread rice onto a baking dish. Whisk vinegar, sugar, and salt together and drizzle over the rice. Mix the rice until cool enough to handle.
- 8 sheets toasted nori
- 32 thin strips of flavored baked tofu (we used teriyaki for Megafest 7.0)
- 32 thin strips red bell pepper
- 32 thin strips cucumber
- 32 thin strips carrot
- 32 thin strips avacado
- For Megafest 7.1 and Megafest 7.2, I used shiitaki mushrooms used in the production of miso soup, which provided a nice savory base for the rolls
(The original recipe suggested 5 tablespoons roasted peanuts for sprinkling on the sushi before rolling, which I didn't use.)
Place a nori sheet on the bamboo rolling mat. Spread 1/2 cup of rice on the nori sheet along the bottom half of the sheet. Pour 1 teaspoon of the mirin mixture across the rice one inch from the bottom of the rice. Place some combination of the sushi fillings on the rice. Using the mat, roll the nori closed, removing the mat when the roll is complete. Cut the roll into 6 to 8 pieces. Repeat until all of the nori is used.
Serve with soy sauce, wasabi, and pickled ginger. Presentation is important; Japanese restaurants use little gently-curving black ceramic sushi dishes which look pretty nice.
