Jaeger makes a variation of this potato dish on weekends when he has enough time to feed himself properly. He made it for Megafest 6.1.

Ingredients

  • Potatoes O'Brien. Available frozen in your grocery store. I used one-and-a-half 28-ounce bags for six people.
  • Olive oil.
  • Several cloves of garlic.
  • Rosemary. (I used a sprig of fresh rosemary from the plants left over from the garden. I'm impressed it's still growing, but as long as it is, I plan to harvest rosemary for breakfast.)
  • One red bell pepper.
  • Three-quarters of a jalapeño pepper. (I should have used more; this was my first time cooking with jalapeños so I wasn't sure how much to use.)
  • Salt

Serve with some combination of:

  • Grated cheese
  • Ketchup
  • Salsa

Directions

  1. In a large electric skillet, sauté the pressed garlic and chopped jalapeños.
  2. Add the potatoes O'Brien, salt to taste, and rosemary.
  3. Chop the red bell pepper and add to the skillet.
  4. Cook until done. The directions on the frozen food may prove useful.
  5. Serve with the ingredients listed above.
