Buttermilk waffles

Buttermilk waffles are one of the small number of recipies Jaeger makes on a regular basis. They have appeared at a number of Megafests, including an Epic Waffle Bake-Off with Nemo's sourdough waffles.

Think of them as, oh, crunchy, quilted pancakes.
Honor Harrington, In Enemy Hands, Chapter 3
  • 6 egg whites, beaten stiff
  • 1 cup oil
  • 4 cups buttermilk
  • 4 cups whole wheat flour
  • 1 tbs sugar
  • 2 tsp salt
  • 2 tsp baking powder (High altitude: 1 1/2 tsp)
  • 1 tsp baking soda (High altitude: 3/4 tsp)

Mix liquid and dry separately then together. Mix until just blended. Fold in egg whites. Bake in hot waffle iron. Megafest waffles should be baked in a keyboard-shaped waffle iron and served carefully. Note that these waffles are heavier than traditional, white-flour-based waffles and are therefore unsuited for Belgium waffles.
