Tamari-Tofu Broccoli Rice Dish

What follows is a rough description of how the dish that was made for the fest was prepared.

Tofu

Ingredients:

  • Tofu. Extra firm style seems to work best for this due to its texture. (White Wave brand is what I used.)
  • Tamari sauce.
  • Canola oil.
  • (optional) Seitan wheat gluten. (I only added it this time because I had an extra package of it laying around, but it did add a nice variety to the mix.)

Process:

  • First cut the tofu block into cubes.
  • (optional step) Put the cubed tofu in the freezer for several hours, then thaw it back out. This saps more moisture out of the tofu, so that when it is marinated, more of the tamari will soak in.
  • Put Tofu in the bowl, and pour tamari over it liberally. Leave it to sit in the sauce for anywhere from 5 minutes to several hours. (The longer you leave it, the more the flavor will soak in.) Mix it around several times while it sits, as the tamari will tend to sink to the bottom of the bowl, and it's good to get it spread around all the tofu as much as possible.
  • Pour a thin layer of canola oil over a baking pan. Spread the tofu over the pan so that it all sits in a single layer.
  • Preheat oven to 400F. Put the tofu in and bake it for 10 minutes. Take it out of the oven and flip the tofu over with a spatula, mix it around a bit. Put it back in for another 10 minutes, flip it over again. Repeat a third time, or until all the tofu turns a nice shade of brown.
  • After removing it from the pan, the tofu is ready to mix with other items to serve!

Rice

Ingredients:

  • Long-grain brown rice.
  • Water (roughly twice the volume of the rice)
  • Butter
  • Salt

Process:

  • Put water in a kettle. Bring it to a boil. Add salt and a chunk of butter.
  • Dump in the rice, put the lid on the kettle, let it simmer for around an hour, or until almost all the water has boiled away.

Broccoli

Boil some water with a little salt in it. Chop up some fresh broccoli. Put the chopped stems into the water first, as they take a little longer to cook. Then add the broccoli flowers. Let it boil/steam for maybe 15 or 20 minutes. It's ok if the water level stays below the top of the broccoli flowers, so long as you mix it up a bit while it cooks. This will make it less likely for the broccoli to become mushy.

Combining everything

For the fest, to make it look nice, after everything had cooked, I spread the rice on the bottom of the baking sheet, then layered broccoli and tofu on top of it. I also sprinkled another dose of tamari over the top of the whole thing. Individual eaters may also add more tamari to suit their own tastes.
