Sausage egg Fritatta

SAUSAGE-EGG FRITTATA

   * 32 oz bag frozen O'Brien Potatoes
   * 1 16-oz (or 12-oz) roll sage flavored bulk sausage, cooked
   * 10 hard boiled eggs, chopped
   * 1 can condensed cream of mushroom soup
   * 2/3 soup can milk
   * 3 green onions, chopped
   * 2 cups Colby-Jack cheese, shredded
   * Salt & Pepper to taste

In 8 16oz. greased ramekins, or a 9x13" greased casserole, layer potatoes, sausage and eggs. Combine soup and milk, then pour over other ingredients. Sprinkle top with cheese. Cover with foil. Bake in a 350 oven 45-55 minutes.

To serve, garnish with green onions, or parsley & a tomato slice.

  • This can be prepared the night before and refrigerated until you're ready to bake it.
