Based on prior trips vegetarian food can be a bit tricky to find up in the mountains. Below are restaurants that sound like they might be decent in the general vicinity of Copper Mountain:

Copper Mountain itself is very much a ski town and doesn't have that many restaurants. However, they have complied a list of restarants as well as a pdf listing vegetarian and gluten-free menu options for their restaurants. I don't know if any of the restaurants are any good. (Daylight Donuts has good donuts but I understand one isn't suppose to make a meal of donuts).

Breckenridge (about 26 min from Copper)

Soupz On - Usually have 2 vegetarian soups, soups change daily. The soup I had (sun-dried tomato risotto) was excellent.

Dillon (about 14 min from Copper)

Cafe ProFusion - Gluten-Free restaurant with some vegan/vegetarian options. Happy Cow, Yelp, Trip Advisor

Dillon Dam Brewery - Not a lot of vegetarian choices but had the Naked Pasta before which was quite good. Yelp, Trip Advisor

Silverthorne (about 12 min from Copper)

Sunshine Cafe - Tried eating here last time we were in Breckenridge but the wait was insane so we gave up. If this looks interesting, we might want to see about reservations. Yelp, Trip Advisor

Yellow Belly Chicken - No vegetarian entree per se but offer a choice of any 4 sides which looks interesting. Yelp, Trip Advisor

Atwater on Gore Creek - Sounds like it might be on the expensive side (not sure). Current menu looks fairly vegetarian friendly. Yelp, Trip Advisor

Minturn (about 28 min from Copper)
