Baked Ratatouille

The Megafest is ongoing and I decided to make this for my contribution.

Problem was, I couldn't find a recipe like the one implied in the movie Ratatouille. Kiesa helped. She pulled two recipes for me to combine. One was a Ratatouille stew recipe, but we liked the spices. The second was a baked dish similar to what we wanted to make but we didn't like the spices or some of the ingredients. So we merged the recipes. The group here decided this was mighty tasty. I'm adjusting this recipe to correct minor problems with my execution today since it was a real crapshoot merging the two recipes.

Baked Ratatouille

3 small zucchinis
3 small yellow squash (same diameter as the zucchinis)
3 roma Tomatoes
1 yellow onion
8 cloves garlic
1/4 cup olive oil
2 whole bay leaves
1 1/2 tsp. basil
1 1/2 tsp. marjorm
3/4 tsp. oregano
1 tbsp. salt (heaping)
dash of ground rosemary
black pepper to taste
OPTIONAL: 3 tbsp. dry red wine (such as Cabernet Sauvignon)

Directions

Thinly slice the zucchinis and squash in uniform slices about 1/8th inch thick. Set aside.

Dice tomatoes. Set aside.

Lay out the zucchini and squash slices, overlapping and alternated, coiled around a 9x13" Pyrex casserole dish (the pan does NOT need to be sprayed or greased in any way).

Combine diced onion, finely diced garlic (not crushed), olive oil, and spices. Saute to blend flavors and mostly cook onion. Remove bay leaves.

Drizzle the sauted mix evenly on top of the rows of zucchini and squash. Top whole dish evenly with diced tomatoes.

OPTIONAL: Drizzle the red wine evenly across dish. NOTE: I forgot to do this when we made the dish, but I suspect it would be very tasty and add another layer to the amazing flavor.

Bake at 350 degrees for approximately 40 min. until zucchini and squash are soft but still have some firmness.


NOTE: Kiesa was nice and got fresh basil, marjorm and oregano. I don't know exactly what this would taste like with the powdered spices, so once I make it with them I might need to adjust the amounts slightly.
