Scrambled Tofu

Every variation of this is slightly different. This time, I took canola oil and fried about 1/2 an onion in it till they were translucent. Then I added about 4 lbs of tofu that had been mashed (I just squeezed it through my fingers. I fried until the tofu was browned and then added cheese (cheddar and Gruyere), fresh Red Rubin Basil (any kind would work), chives, and salt.
